HOLY MOLY GUACAMOLE!
I mean, that face! I don’t know about you, but guacamole is one of my favorite things, EVER! I am pretty sure that was carried on down to my boys as well. In this picture, my littlest dude was caught with his face in a bowl of this nutrient dense goodness. Cheeks for days!

EAT UP! Avocados are a nutrient dense food, meaning they are power packed with tons of nutrients. This creamy fruit is a good source of fat and well, they flat out taste good!

In honor of Cinco de Mayo, I wanted to get this recipe out for you all! I hope you get to celebrate and by celebrate, I mean make this guacamole. It is SO, SO good!

RECIPE:

– 1/4 of a red onion
– 1/4 cup of fresh Cilantro
– 4 Large or 5 Medium Avocados
– 1 lime
Garlic powder or granules
– Sea salt
– For extra kick – Sriracha

PREP:

  • Mince the red onion. You want it to be minced or a small dice. I think it’s nice when you don’t get a big chunk of onion in one bite. When it is minced, the flavor is there, but not large chunks of onion.
  • Finely chop the Cilantro – see above. No one wants a salad of cilantro in a bite either 😉 in my husband’s words.
  • Cut the Avocados in half, seed and scoop the flesh of the fruit into a bowl.
  • Add the juice of 1/2 – 1 lime. We like lime, so we do 1 small lime.
  • Use a masher (I got mine at IKEA!) to get the avocados ALL mashed up in here!
  • Add the red onion, cilantro, sea salt (we use this one), and a sprinkle or two of garlic powder.
  • For extra kick, add a dash or two of Sriracha. This is my husbands favorite condiment and it definitely adds a little something.

The key is perfectly ripe avocados, not under and not overly ripe. This is a tough recipe to dial in ingredients perfectly as Mother Nature has some say in the ingredients size. So, play around with it a little to get it just right for you! Let me know how it goes!

I serve this with a taco bar – see this post for that recipe. I love dipping Plantain Chips in Guacamole – Holy Moly!
